zThese are really awesome muffins...With mild sweetness and a soft texture, this would definitely be a winner:) You can serve them as breakfast or as a evening snack. I made a big batch of them during the hurricane and had them during those two/three days when we were out of power and water supply.
Ingredients:
(Yields 12 muffins)
1 1/3 cup All purpose flour
2 tsp Baking powder
1 1/4 tsp Baking soda
1/2 tsp Salt
3/4 tsp Cinnamon powder
3 Eggs
2/3 cup Olive oil
1 cup Dark brown sugar
2 cups grated carrots
1/2 cup chopped walnuts
1/2 cup raisins
1 cup warm water
Pre-heat the oven to 350F. Grease or line the muffin tray.
Meanwhile soak the raisins in the warm water for 15 mins. Drain and squeeze the water from the raisins and keep aside. Sieve together all the dry ingredients the flour, baking powder, baking soda, salt and cinnamon powder. In a separate bowl whisk the eggs, oil and the brown sugar until they blend. Add the dry ingredients, carrot, walnuts and raisins and fold the mixture(don't mix too much at this stage). Spoon the mixture into the muffin tray and bake for 20 mins or until done.
